The programme has six main learning tracks:
Food product technology
This track includes courses on;
- food microbiology and analysis;
- food chemistry and analysis;
- engineering properties of biological materials;
- fruit, vegetable and legume science and technology;
- cereal science and technology;
- meat, poultry and fish technology;
- dairy science and technology;
- food marketing, consumer behavior and product development.
Food quality assurance and safety
This track includes courses on;
- food chemistry and analysis;
- food microbiology and analysis;
- food safety and quality systems (including HACCP);
- total quality management in the food industry;
- human nutrition;
- nutrition and food systems;
- functional foods and nutraceuticals;
- food supply chain and quality management.
Food process and preservation engineering
This track includes courses on;
- human nutrition;
- engineering properties of biological materials;
- transport phenomena and engineering kinetics;
- food processing and product development;
- thermal processing of foods;
- low temperature processing of food;
- post-harvest technology;
- total quality management in the food industry;
- food supply chain and quality management;
- nutrition and food systems.
Scientific independent research
This track includes courses on;
- applied statistics;
- experimental planning and data modelling;
- scientific writing, ethics and intellectual property rights;
- MSc thesis;
- Internship.
Communication and management
This track includes courses on;
- scientific writing, ethics and intellectual property rights;
- technological innovation and entrepreneurship management;
- foundation of law, philosophy and ethics;
- MSc thesis;
- Internship.
